Fan/convection ovens run hotter for the same dial setting. If a recipe gives a conventional (non-fan) temperature, reduce it by about 20°C, 25°F, or roughly one gas mark for a fan/convection oven. This tool's fan toggle applies exactly that adjustment — it's a widely used rule of thumb, not a guarantee, since ovens vary.

About this tool

Gas mark values come from the standard UK conversion table used on oven dials and in recipe books — it isn't a simple formula, so values are matched against that table and interpolated for anything in between. Celsius and Fahrenheit convert with the exact formula (°F = °C × 9⁄5 + 32), so those two are always precise; gas mark is inherently the roughest of the three since ovens map it to temperature slightly differently by manufacturer.
